Aam Kuccha by Madhu Varma


  1. Raw Mango – ½ Kg, grated
  2. Dry Yellow Mustard Seeds – 75 gms, ground
  3. Red Chilli Flakes – 35 gms
  4. Turmeric Powder – 15 gms
  5. Kalonji – 3/4Teaspoon
  6. Ajwain – 3/4 Teaspoon
  7. Methi Seeds – 1/2Teaspoon, roasted dry and powdered
  8. Hing – 1/2 Teaspoon
  9. Kala Chana – ½ Cup,soaked overnight and water drained .
  10. Mustard Oil – 1/2 Cup
  11. Salt – to taste 

Mix all the above ingredients in a jar. Cover it with thin muslin cloth and keep it in the sun for two or three days for it to mature.
