Gajar Halwa by Bubbles Saighal

Ingredients

  1. Carrot – 1/2 Kg, peeled and grated
  2. Almonds – 1/2 cup, blanched and chopped
  3. Raisins or Cashew Nuts – 1/4 cup
  4. Pure Ghee – 3 Tablespoons
  5. Milk – 2 cups
  6. Green Cardamoms – 4
  7. Mawa or Khoya – 3/4 cup
  8. Sugar – 1/2 cup

Method

Boil the milk and add the carrots. Cook on low heat till milk evaporates. Add ghee and sauté. Slowly add the khoya and cook for another 5-6 minutes. Add the green cardamoms and sugar and keep stirring till sugar dissolves in the mixture. Serve it hot, garnished with the dry fruits.
