Gajar Halwa by Bubbles Saighal
Ingredients
- Carrot – 1/2 Kg, peeled and grated
- Almonds – 1/2 cup, blanched and chopped
- Raisins or Cashew Nuts – 1/4 cup
- Pure Ghee – 3 Tablespoons
- Milk – 2 cups
- Green Cardamoms – 4
- Mawa or Khoya – 3/4 cup
- Sugar – 1/2 cup
Method
Boil the milk and add the carrots. Cook on low heat till milk evaporates. Add ghee and sauté. Slowly add the khoya and cook for another 5-6 minutes. Add the green cardamoms and sugar and keep stirring till sugar dissolves in the mixture. Serve it hot, garnished with the dry fruits.
