Haitian Tomato Salad by Lisa Anand
- Tomatoes – 10
- Salt – to taste
- Sugar – a pinch
- Chopped Parsley – ½ cup
- Chopped Onions – ½ cup
- Malt Vinegar and Olive oil – 2 Tablespoons each
- Boiling water
Make sure the tomatoes are ripe and firm. Place them in a bowl and cover with boiling water. Leave for a few minutes and then put them in cold water. The tomatoes can be easily peeled now.
Cut the tomatoes and remove the seeds and any liquid, sprinkle with salt and sugar. Mix the parsley and onions and the add the malt oil and vinegar. Mix well and serve cold.
