Pennein Tomato Sauce

Penne  in Tomato Sauce by Just Manners


  1. Ripe Tomatoes – 600 gms
  2. Onions – 2, medium
  3. Garlic – 8 cloves
  4. Cooking Oil – 1 ½ Tablespoon
  5. Salt – to taste
  6. Pepper – ¼ Teaspoon
  7. Red Chilli Powder – ½ Teaspoon
  8. Ajwain Paste – ¼ Teaspoon
  9. Water – 1 ½ cups
  10. Penne – 250 gms


Put the tomatoes in boiling water and leave for 2 to 3 minutes or till the skins can be easily peeled off. Put the skinned tomatoes in a blender along with the onions and garlic and blend till a smooth paste is formed. Add the salt, pepper, chilli powder, ajwain, water and 1 tablespoon of oil and cook over medium heat till it thickens to a sauce-like consistency. Keep the sauce aside.

Boil 1 tablespoon of salt in 2 ½ litres. Once it has boiled, add the Penne and cook till done. When done, drain the liquid and pour cold water to prevent further cooking. Mix ½ tablespoon oil in the Penne and keep aside till ready to serve. Before serving, heat the tomato sauce, pour over the Penne and serve. You can add olives or sliced capsicum to this, if you like.
