Rice with Beans Haitian Style By Lisa Anand
Ingredients
- Kidney Beans (rajma) – 1 cup, boiled
- Rice – 1 cup, soaked in water for 1 hour
- Water – 2 cups
- Onion – 2, medium
- Garlic – 1 pod
- Thyme – 1/2 Teaspoon
- Red pepper – 2
- Scallion – 2
- Olive oil – 2 tablespoons
Method
Mash together the onions, garlic, red peppers, thyme and scallion. Heat oil in a pan and saute this mixture. Add the boiled beans and soaked rice. Add the water and cook till done.
