Rice with Beans

Rice with Beans Haitian Style By Lisa Anand

Ingredients

  1. Kidney Beans (rajma) – 1 cup, boiled
  2. Rice – 1 cup, soaked in water for 1 hour
  3. Water – 2 cups
  4. Onion – 2, medium
  5. Garlic – 1 pod
  6. Thyme – 1/2 Teaspoon
  7. Red pepper – 2
  8. Scallion – 2
  9. Olive oil – 2 tablespoons

Method

Mash together the onions, garlic, red peppers, thyme and scallion. Heat oil in a pan and saute this mixture. Add the boiled beans and soaked rice. Add the water and cook till done.
